Where the Mediterranean comes to stay

Los Pinochos

Where Mediterranean cooking meets the calm of a dining room built to linger. Seasonal produce, true craft and warm hospitality, served one table at a time. In Simancas, 12 km from Valladolid, on the Carretera Burgos-Portugal.

Philosophy

A table where you feel at home.

At Los Pinochos we cook as we do at home: with the truth of the produce, the care of the craft and the warmth of someone opening the door to their own. Our kitchen travels from Valencia to Valladolid without losing its original soul.

Every visit is a unique service. The dining room moves to the kitchen's rhythm, the wines are chosen with the table in mind, and the small details - a candle, a warm loaf of bread, a knowing look - are looked after as if they were the first.

Our ritual

The homeland ritual.

Agua de Valencia

The classic from Valencia: Licor 43, vodka, orange juice and cava. Sweet, fresh, with just the right fizz. Back home, you order it without asking — try it and you will see.

Café cremaet

Our Valencian coffee, half coffee and half rum, cinnamon and citrus maceration. The perfect finish, the last sweet note of the meal. This is how we close at Los Pinochos.

Kitchen | Home | Memory

Benji. Hands that taste like home.

I am one of those who believe a well-made rice is recognised at first bite. We look after it here the way real things are looked after: with time, with care, and with whoever tastes it at the end.

Valencian by origin, adopted by Valladolid. Benji has been at the helm of the kitchen at Los Pinochos from day one, with one idea in mind: tradition is not modernised, it is respected and told well.

The cellar

Wines that accompany the table.

A small, carefully chosen cellar. Winemaker wines, trusted DOs, house cavas and a selection of whites that pair with our rice dishes as if they were made for them.

We advise with the same calm we cook with. Ask us freely: pairing is part of the service.
