Where the Mediterranean comes to stay

Los Pinochos.

A table built to linger. Seasonal produce, the craft of a lifetime and the calm of a dining room where Valencian cooking is told one service at a time.

Philosophy

A table where you feel at home.

At Los Pinochos we cook as we do at home: with the truth of the produce, the care of the craft and the warmth of someone opening the door to their own. Our kitchen travels from Valencia to Valladolid without losing its original soul.

Every visit is a unique service. The dining room moves to the kitchen's rhythm, the wines are chosen with the table in mind, and the small details - a candle, a warm loaf of bread, a knowing look - are looked after as if they were the first.

Valencian rice dishes and plates.

The kitchen that defines us. The one we learnt in Valencia and the one we keep refining every day in Simancas.

Paella Valenciana

The classic recipe, with free-range chicken, butter beans, runner beans, artichoke, duck, snails and a slow sofrito.

Black Rice (Arroz Negro) from Restaurante Los Pinochos, Valencian cuisine in Simancas (Valladolid)

Black Rice (Arroz Negro)

Squid ink, Denia red prawn and a socarrat that cracks. As if by the coast, in the middle of Valladolid.

Arroz a Banda from Restaurante Los Pinochos, Valencian cuisine in Simancas (Valladolid)

Arroz a Banda

Concentrated fish stock, artichokes from the Castilian market garden and a whisper of alioli that changes everything.

Our rituals

The ritual of the terreta.

Things that define us without being on the menu. The agua de valencia, the cafe cremaet, the long sobremesa. Details that taste like home.

Agua de Valencia

The classic from Valencia: Liqueur 43, vodka, orange juice and cava. Sweet, fresh and with the right fizz. In the homeland you order it without asking — try it and you will see.

The paella, the black rice and the arroz a banda, all on wood fire. One obsession from the homeland. Order whichever calls you — none of them miss.

Cafe cremaet

Our Valencian coffee, half coffee and half macerated rum, cinnamon and citrus. The perfect ending, the last sweet note of the meal. This is how we close at Los Pinochos.

Kitchen | House | Memory

Benji. Hands that taste like home.

I'm one of those who believe you recognise a well-made rice on the first spoonful. Here we look after it the way you look after the things that matter: with time, with care, and with whoever is going to taste it at the end.

Valencian by origin, Valladolid by adoption. Benji has run the kitchen at Los Pinochos since day one, with a single idea in his head: tradition is not modernised, it is respected and told well.

The cellar

Wines that accompany the table.

A small, carefully chosen cellar. Winemaker wines, trusted DOs, our house cavas and a selection of whites that pair with our rice dishes as if they had been made for it.

We will guide you with the same calm we cook with. Ask without any commitment: pairing is part of the service.

The details

The things that you don't see, but you feel.

A loaf of bread that still cracks. A drizzle of oil that finds its way. The agua de valencia you order without thinking. The cristal bread, the small china, the wine glass in the right place.

At Los Pinochos, the details are not an extra. They are the kitchen.
